Situado en la calle Independencia y Bolívar en el centro de Chihuahua, está lo que asemeja a una pintoresca casita como salida de una fábula; su interior alberga experiencias, historias, inventos, risas, llanto y sobre todo, café.
“Somos una pequeña comunidad alrededor del café, tenemos un público que tiene mucha conciencia social, conciencia política y ambiental. Son gente de un rango muy diverso de edades que está descubriendo a través del café, una forma de relacionarse con gente que piensa como ellos”.
Con 10 años de experiencia en el giro, Oscar Guillermo fundó El Marro tras haberse adentrado en el mundo del café gracias a sus múltiples trabajos como mesero en algunas de las cafeterías más famosas de la ciudad.
“El mundo del café llega a mi cuando comienzo a trabajar sobre todo en Kaldi Café, que es una cafetería que tiene 20 años en la ciudad y la primera de especialidad. Gracias a los dueños me pude adentrar en este mundo tan específico que es el café y descubrí las cafeterías de la tercera ola. Me gustó mucho el tipo de mensaje que comparten, el modelo de negocios, lo bonito del oficio, y es que soy amante del café y es una de las cosas que mi abuela que en paz descanse me dejó instruido desde pequeño”.
A sus 30 años, Oscar ha tenido la fortuna de adquirir sus conocimientos por el lado académico y técnico. Cuenta con un master en Ciencia y Economía del Café que estudió en Italia y es Ing. Químico en Alimentos por la UACH; además se ha capacitado en el oficio del barismo con cursos y capacitaciones principalmente en Ciudad de México y Guadalajara.
LA NUEVA OLA DEL CAFÉ
El concepto que busca evolucionar y obtener la sustentabilidad. Esta es la llamada “nueva ola del café”, a la que se viene adaptando El Marro después de 4 años de vastas experiencias que han ido evolucionando el concepto del lugar de un café de especialidad a una cafetería circular.
“Buscamos generar bienestar con nuestras bebidas, un estado anímico positivo en las personas; crear una comunidad alrededor del café que nos permita tener productos a precios justos que no afecten al cambio climático, que no sean excesivos con residuos y huella de carbono y sobre todo, que ofrezcan la posibilidad de ser más justos con nuestros productores y productoras”.
